Cherry and Cheese Appetizer

From Dorothy McNett's recipes at George Washington loved cherries and also liked eating cheeses although their varieties were not as broad as our selection! A nice brie is good with this, but also cheddar slices, etc.

3-4 cloves garlic
1/2 cup pitted red cherries (fresh or frozen)
1 teaspoon honey or raw sugar
1/4 cup orange juice
3 tablespoons balsamic vinegar
1/4 teaspoon vanilla extract or vanilla bean paste
1/4 teaspoon sea salt
freshly ground pepper
1/2 cup extra virgin olive oil
fresh greens, such as baby spinach
more fresh cherries
nice wedge of brie cheese
crackers or bread slices for serving

Using food processor with steel chopping blade in place and the motor running, add the garlic to mince thoroughly. Add the cherries, honey, orange juice, balsamic, vanilla, salt, and pepper. Whirl to mix completely, getting the cherries nicely pureed. With motor running, slowly drizzle in the olive oil to make a great dressing. Arrange the greens, fresh cherries and cheese on a beautiful platter. Drizzle with the cherry dressing, and serve with plenty of crackers or bread slices.
