Pansy and Cheese Salad

From Dorothy McNett's recipes at

fresh iceberg lettuce, or other greens
1 cup cottage cheese
1-2 tablespoons extra virgin olive oil
pinch of salt and pepper
2 pansy flowers, diced
10-12 more fresh pansy flowers, left whole

Arrange the greens over a beautiful platter or plate. Place the cottage cheese in the center. In small bowl, combine the olive oil, salt, pepper and diced pansies. Drizzle over the cheese. Arrange the whole flowers over the salad and serve!
