Herb Pasta Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any fresh herb, as desired. If making the recipe for Pasta Herb Squares, make this sauce using the same herb that you used inside the pasta squares. I am using chervil.

2 tablespoons olive oil
1 small onion or shallot, diced (about 1/2 cup)
2 - 3 fresh tomatoes, diced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
2-3 tablespoons fresh herb, such as chervil or basil, torn into small pieces
1/4 - 1/2 pound fresh mozzarella, cut into small cubes

Heat oil in heavy bottomed saute pan or saucepan over medium heat. Add diced onion. Cook and stir until it has softened and is turning a bit brown. Add tomatoes, salt, pepper and herbs. Cook over medium heat about 8-10 minutes. It depends on the tomatoes so just cook until it looks like a nice pasta sauce consistency. Remove from the heat and allow to stand about 5-10 minutes and then add the mozzarella. Pour over your favorite cooked pasta, garnish and serve.
