Peach "Upside" Down Caramel Dessert
From Dorothy McNett's recipes at www.dorothymcnett.com. This can be served right side up, or upside down...you get to choose! It is so easy to assemble, then just bake and serve. Depending upon the peaches, they may cook up very soft or stay fairly firm...it is always a tasty surprise!
2-3 fresh ripe peaches, sliced evenly
Preheat oven to 375 degrees. Lightly oil an 8 by 8 inch or similar size baking dish. Arrange the sliced peaches over the bottom. Cut the caramels in half and place over the peaches. In batter bowl whisk together flour, sugar, baking powder, nutmeg, cinnamon, and salt. Blend in the milk. Pour over the peaches. In batter bowl combine sugar, butter or olive oil, vanilla and muscat or water. Cook 2 minutes in microwave, stir to dissolve the sugar. (Or use a metal saucepan and cook over medium high heat several minutes to dissolve the sugar.) Pour the hot mixture over the batter. Do not stir. Bake 40-45 minutes, or until nicely browned and cake tests done on the top. Allow to cool about 15-20 minutes. Invert onto a serving platter, but it is also beautiful to serve as is, or to cut into serving pieces and then invert the serving pieces onto individual plates if desired.
