Dry Seasoning for Grill or BBQ

From Dorothy McNett's recipes at www.dorothymcnett.com. Make an interesting mixture of dry herbs and seasonings to sprinkle over steaks, chops, fish, etc. before grilling.

1/2 - 1 teaspoon unsweetened cocoa powder
1/2 - 1 teaspoon dried herbs, such as Herbe d Provence
1/4 - 1/2 teaspoon semi-coarse sea salt
1/4 teaspoon pepper, or hot chili pepper, cayenne as desired

Combine and use to sprinkle over steaks, chops, fish, chicken, etc. for grilling or BBQ. It is best to rub a bit of olive oil over the meat first, and then gently sprinkle on the mixture, rubbing it in a bit.
