Avocado and Jicama Salad

for the salad:
1 - 2 avocados
zest of 1 lime
juice of half the lime
1-2 oranges
1 jicama
1 small head iceberg lettuce, or other greens of choice
1/2 cup pitted ripe olives

for the dressing:
1 avocado, nice and ripe
1/3 cup orange juice
juice of the other half of the lime
1 tablespoon sugar or honey
1/2 teaspoon semi-coarse sea salt
freshly ground pepper, or cayenne, as desired
2-3 tablespoons olive oil or avocado oil, if desired

First make the salad: Remove the avocado from the skin, removing the pit. Cut into thin slices or cubes. Sprinkle with the lime zest and the juice of half of the lime. Zest the orange over the avocado slices as well. Peel and thinly slice the orange. Peel and grate the jicama, using a box grater or food processor. Arrange the lettuce leaves over a large serving platter, or over individual salad plates. Arrange the slices of avocado and orange over the greens. Sprinkle with the olives.
For the dressing: Mash the avocado, adding remaining ingredients, mixing until smooth. I like to use the food processor, but if the avocado is ripe enough it can be nicely done with a spoon.
