Honey Butter
From Dorothy McNett's recipes at www.dorothymcnett.com. Delicious with hot corn breads, biscuits, etc. Use local honey!
1/2 cup unsalted butter
1/3 cup local honey
pinch of semi-coarse sea salt (Monterey Bay)
fine zest of 1/2 lemon, lime, or orange
Allow butter to stand at room temperature several hours to soften, or place in a glass measuring cup and soften in microwave 30 seconds on half power. Do not melt! When butter is soft, blend in remaining ingredients until nice and fluffy. Serve in small bowls to spread over warm breads, etc.
