Ten Minute Fresh Tomato Sauce / or Soup

From Dorothy McNett's recipes at www.dorothymcnett.com. Easier than buying and opening a jar of ready-made sauce, and so wonderfully fresh and tasty! Use only the best of ingredients and fresh red ripe tomatoes. Change the herbs as desired. This is just a guide to help you cook and enjoy the freshest of summer-time tomatoes.

1 small onion, finely chopped
2-3 cloves garlic, chopped
2 tablespoons extra-virgin olive oil
2 cups diced fresh red ripe tomatoes (2 large tomatoes)
2 tablespoons red wine (Chianti, of course!)
2-3 sprigs fresh parsley, finely snipped
1/2 teaspoon dried oregano, or fresh
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 teaspoon raw sugar

In glass or ceramic batter bowl, combine chopped onion and garlic. Drizzle with the olive oil. Cook in microwave 2 minutes. Stir in remaining ingredients. Cook 2 minutes. Stir. Cook another 3-4 minutes. Use as desired for pastas, soups, chowders, vegetable dishes, etc.
