Salad of the Day
From Dorothy McNett's recipes at www.dorothymcnett.com. For a great presentation, tuck the blue cheese into the centers of the small tomatoes. Add any freshly cooked baby shrimp or scallops, if desired.
greens of all kinds...don't be shy
Place washed and dried greens into a salad bowl. Top with diced fruits and vegetables of choice. Crumble on some blue cheese. In measuring cup, whisk the oil, vinegar, mayonnaise or mustard, snipped herbs, salt and pepper. Taste to make sure it is just right, adding more seasonings or a pinch of sugar if necessary. Pour over the greens, toss and serve.
