Pacific Island Salad

From Dorothy McNett's recipes at A taste sensation from Hawaii to New Zealand and all of the wonderful islands of the Pacific.

1 cup grated coconut
1 - 2 carrots, grated
1 papaya, diced or grated
1 bell pepper, diced or grated (green, or red, or yellow!)
2-3 fresh tomatoes, diced

for the dressing:
zest and 2 limes, juiced
1/2 cup coconut milk
1 tablespoon soy sauce
1 teaspoon raw sugar
salt and pepper, as desired

Combine the grated or diced coconut, carrots, papaya, bell pepper and tomatoes in salad bowl. In glass measuring cup, whisk the lime juice (I also add the zest of the limes), coconut milk, soy sauce, sugar, salt and pepper. Drizzle over salad, toss and serve.
