Fava Beans Antipasta di Terra

From Dorothy McNett's recipes at www.dorothymcnett.com. Use fresh fava beans when available, otherwise use canned ones well drained.

2 pounds unshelled fresh fava beans, or 1 can good quality ones
1/2 cup chopped cheese, such as pecorino
2 teaspoons finely chopped fresh thyme
zest of one lemon
about 1 teaspoon fresh lemon juice
freshly ground pepper

To prepare fresh fava beans, open pods and remove beans. Cook beans about 4 minutes in boiling water. Drain and cool. Finely chop the cheese. Combine all ingredients. Serve as a finger food or as a salad over greens, popping out the small inner part of each fava bean.
