Breakfast, Brunch, or Sandwich "Sausage"

1 pound fresh ground turkey or chicken
3 tablespoons fresh parsley
1 tablespoon green onion slices
1 large clove garlic
1/2 teaspoon sage
1/2 teaspoon marjoram
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon nutmeg
1/4 teaspoon paprika
2 tablespoons ground flax seeds
1/4 cup oat bran plus a bit for coating

whole wheat or other desired bread slices or buns
mayonnaise or other sandwich spread, as desired
lettuce
freshly sliced tomatoes or halved baby tomatoes

Combine ground turkey or chicken, seasonings, flax seeds and bran. Make flat sausage patties, roll each in a little oat bran. Heat griddle or saute pan with 1-2 tablespoons olive oil. Cook about 3 minutes per side, or until done and nicely browned.
