Baby Pumpkins with Feta and Spices

From Dorothy McNett's recipes at www.dorothymcnett.com. And you thought all of those baby pumpkins were only were decorations!!! Eat them!

baby pumpkins (figure one per person)
drizzles of extra virgin olive oil
1/4 teaspoon each of dried thyme, cumin, coriander
pinch of sea salt
1-2 teaspoons toasted sesame seeds
about 1 tablespoon crumbled feta cheese per pumpkin

Wash each pumpkin and pat dry with paper towels. Cook 2 at a time in the microwave, for about 4 minutes. (Calculate 2 minutes per pumpkin, generally). Let them stand for about 30 minutes to cool enough to handle. In meantime, combine the spices, salt and sesame seeds. Slice off the top of each pumpkin and carefully remove pulp and seeds, discarding the seeds as you work. Save as much pulp as you can. Combine spices, olive oil, feta cheese and pulp and pile into the shells, drizzling with a bit more olive oil. Arrange the tops attractively on each one and serve.
