Ketjap Manis

From Dorothy McNett's recipes at www.dorothymcnett.com. This is an Indonisian sweet soy sauce. It can be found in most Asian markets. This is a version you can make at home, and it stores several months in refrigerator. Use it as a barbecue sauce, for a seasoning sauce for chicken, etc. and in the Philippine Islands it is served often with fried sweet potato pieces, etc.

1 cup soy sauce
3/4 cup sugar
1/2 cup molasses
1-2 cloves garlic
small slice of fresh ginger root
1/2 teaspoon coriander seeds

Combine all ingredients in heavy bottomed saucepan. Bring to a boil, stir to dissolve sugar. Reduce heat and simmer about 5-8 minutes, stirring often. Strain, cool, and enjoy!
