Schneegestober (Cheese Spread)
From Dorothy McNett's recipes at www.dorothymcnett.com. Serve with thin slices of whole wheat and/or rye bread. It is to look like a snow storm just happened, bread slices piled high with drifts of white cheese.
2 cups cottage cheese, small curd
4 oz. cream cheese
1 small onion or shallot, very finely chopped
1/2 teaspoon sea salt
1 tablespoon prepared horseradish, or horseradish mustard
a few grindings of pepper
red radish slices
pickled onions
thin slices of whole wheat or rye bread
butter lettuce leaves
Use a food processor or electric beater. Beat the cheese until smooth, adding the cream cheese, chopped onion, salt, horseradish and pepper. Serve as a spread for bread slices, garnished with radish slices, pickled onions and tender lettuce leaves.
