Pasta and Potatoes
From Dorothy McNett's recipes at www.dorothymcnett.com. An old Italian favorite, cooking a potato or two along with the pasta. Great for a flavorful winter main dish or salad.
1/4 cup extra virgin olive oil
In medium sized heavy bottomed saucepan, heat the olive oil, adding the chopped garlic and peppers. Gently cook and stir over medium heat 2-3 minutes. Cut the radicchio into quarters and then slice crosswise into strips. Add to the pan and cook about 1 minute, or until radicchio is wilted a bit. Set aside. Bring a large pot of water to boil (pasta cooker is great!) and when it is boiling, add the salt. Peel the potato if necessary, and then cut into small pieces, about 1/2 inch or so. Add to the boiling water and cook 3 minutes and then add the pasta. Stir well. Cook 8-10 minutes, or until tender. Drain. Place in a large bowl, toss in the radicchio mixture. Feel free to drizzle with a little more olive oil, if desired.
