Pasta and Potatoes

From Dorothy McNett's recipes at An old Italian favorite, cooking a potato or two along with the pasta. Great for a flavorful main dish or salad.

1/4 cup extra virgin olive oil
6-8 cloves garlic, chopped
1-2 jalapeno peppers, or as desired, chopped
2 fresh radicchio
1 teaspoon salt
1 pkg. (12 oz.) spaghetti or fettuccine or pad thai...
1 medium to large potato (sweet potato is great!)

In medium sized heavy bottomed saucepan, heat the olive oil, adding the chopped garlic and peppers. Gently cook and stir over medium heat 2-3 minutes. Cut the radicchio into quarters and then slice crosswise into strips. Add to the pan and cook about 1 minute, or until radicchio is wilted a bit. Set aside. Bring a large pot of water to boil (pasta cooker is great!) and when it is boiling, add the salt. Peel the potato if necessary, and then cut into small pieces, about 1/2 inch or so. Add to the boiling water and cook 3 minutes and then add the pasta. Stir well. Cook 8-10 minutes, or until tender. Drain. Place in a large bowl, toss in the radicchio mixture. Feel free to drizzle with a little more olive oil, if desired.
