Green Peas

From Dorothy McNett's recipes at Use fresh green peas, or buy a package of petite sweet peas, organic if possible. Eat them raw, or saute them in just a bit of extra virgin olive oil. I suspect Hitch would have preferred them cooked!

2-3 cups green peas
1-2 teaspoons extra virgin olive oil
pinches of sea salt and pepper, as desired

Heat a heavy bottomed saute pan, adding the oil and peas. Cook and stir about 1 to 2 minutes if they are fresh, about 3-4 minutes if they were frozen. Do not overcook! Season as desired.
