Quince Paste Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. If you have some Spanish or Portuguese olives, add those as well! Cheshire cheese is perfect with this aa well, and Edward Lear wouild opt for the Cheshire cheese!

lots of fresh salad greens, as desired
small wedge of Manchego cheese
small wedge of Asiago Fresco Mitica cheese
small wedge of Mahon cheese
4 tablespoons extra virgin Spanish or Portuguese olive oil
1 teaspoon white wine vinegar
1-2 tablespoons quince paste
sprinkles of sea salt, if desired

Place the greens in a beautiful salad bowl or platter. Cut the cheeses into slivers or chunks and arrange on the greens. In a small glass measuring cup, whisk the oil, vinegar and quince paste to get it fairly smooth. Pour over the greens, sprinkle with a few sprinkles of sea salt and serve.
