From Dorothy McNett's recipes at www.dorothymcnett.com. Make this ahead and serve it in a fondue pot for a casual party or buffet event.
1 pound bulk pork sausage
In heavy bottomed saute pan, cook sausage in oil or butter until done. Blend in flour, cheeses, wine, and chili powder. Cook 3-4 minutes more, stirring occasionally, until cheese melts, adding more shredded cheese to get a good consistency for dipping. Transfer to a fondue pot or a chafing dish, over a very low flame to keep it warm but not to let it burn. Serve with tortilla chips or corn chips to scoop up fondue. Messy to eat but really good!
