Sausage Fondue

From Dorothy McNett's recipes at Make this ahead and serve it in a fondue pot for a casual party or buffet event.

1 pound bulk pork sausage
2 tablespoons oil or butter
1 tablespoon flour
4-5 cups (or more) shredded Cheddar or Swiss cheeses, or a blend of both
3/4 cup dry white wine
1 teaspoon chili powder, or other seasonings as desired
tortilla chips or corn chips, or other crsipy crackers for dipping

In heavy bottomed saute pan, cook sausage in oil or butter until done. Blend in flour, cheeses, wine, and chili powder. Cook 3-4 minutes more, stirring occasionally, until cheese melts, adding more shredded cheese to get a good consistency for dipping. Transfer to a fondue pot or a chafing dish, over a very low flame to keep it warm but not to let it burn. Serve with tortilla chips or corn chips to scoop up fondue. Messy to eat but really good!
