Holiday Appetizer Cheese Platter

From Dorothy McNett's recipes at Not a very descriptive title for this recipe, but it remains very open-ended, so that you can call it whatever you want! Make a tree, or a wreath shape, or just a round circle and decorate it with cheeses and dried fruits and nuts, etc. Serve as a wonderful welcoming appetizer.

2 cups uncooked oatmeal
1/2 teaspoon semi-coarse sea salt
1/2 teaspoon baking powder
1-2 tablespoons seeds, such as hemp or sesame (optional)
2 tablespoons unsalted butter
1/4 cup water (or sherry or other white wine)

1/2 - 1 cup ricotta or mascarpone cheese
other cheeses, cut into shapes for decorations, etc.
various dried fruits and nuts (goji berries, dried cranberries, etc.)
dark chocolate chips

Preheat oven to 350 degrees. In food processor with steel chopping blade in place,whirl the oatmeal, salt and baking powder to chop up the oatmeal a bit. Add the seeds. In glass measuring cup heat the butter and water about 45 seconds and then drizzle into the mixture, blending until it becomes a nice soft smooth ball,perhaps adding a bit more water if necessary. Line a baking sheet with a silicone mat or sheet of parchment paper. Spread or roll the dough into your desired shape, such as a Christmas tree. Sprinkle on a bit more oatmeal if the dough is too sticky to work with. Bake 18-20 minutes, or until done and lightly browned. Cool completely. Remove it to a serving platter or cutting board. Spread with the desired soft cheese, Now use other cheeses, the dried fruits and nuts and chocolate chips to "decorate" your design. Serve as an appetizer...provide a small cheese knife or two to make serving easier for everyone! Enjoy!
