Spinach Greek Salad (Spanako me Feta Salata)

From Dorothy McNett's recipes at www.dorothymcnett.com. First hard cook the eggs, using my recipe for Cooking Eggs in their Shells.

6-8 cups fresh baby spinach leaves
2--3 green onions, sliced
1 green bell pepper, sliced into neat slivers
1/2 cup pitted black olives
1 cucumber, sliced
1/4 pound of more of feta cheese, crumbled
2-3 hard cooked eggs, sliced
4 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
pinches of oregano
freshly ground pepper

In large beautiful bowl combine spinach, green onions, pepper, olives, cucumber and feta cheese. Gently slice the eggs and toss into the mix. In glass measuring cup, whisk together the oil, vinegar, oregano and pepper. Toss into the salad and serve.
