Blue Cheese Roasted Sweet Pepper Appetizer

From Dorothy McNett's recipes at Just so easy, and so delicious. The sweet baby peppers are not always available, so you can use other sweet peppers cut into quarters and roasted in the same manner.

sweet baby peppers
extra virgin olive oil
blue cheese of choice
crispy crackers or crostini

Preheat oven to 350 degrees. Wash the peppers well, and place in a single layer on a silicon or parchment lined baking sheet with sides. Sprinkle with just a bit of extra virgin olive oil. Bake about 30 minutes, or until peppers have started to brown on the bottoms. Set aside to cool. Remove the stem and tuck in a bit of crumbled blue cheese inside each. Place on a beautiful serving platter, and enjoy!
