Orange Quinoa Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. You can always substitute lemon for the orange, just change the name of the salad! Use any good quality salad greens, making sure you wash them well and pat dry, and then refrigerate until ready to make the salad.

1 cup quinoa
2 cups water or broth

3-4 green onions, sliced
1/2 - 1 cup chopped fresh parsley
1/4 cup chopped fresh basil
2-3 tablespoons fresh mint, minced
zest of 1 orange
about 1/2 cup orange juice
1/4 cup extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
about 1/4 cup sliced olives
fresh salad greens, washed and dried

Rinse quinoa in cold water, using a sieve instead of a colander. Place quinoa and the 2 cups water or broth in saucepan. Bring to a boil, reduce to simmer and cook, covered, for about 15-20 minutes. The liquid will be absorbed and the quinoa opens up a bit. Cool. When ready to serve, combine quinoa and the remaining ingredients in a nice salad bowl, toss and serve.
