The combination of beef, a bit of cayenne, and fresh fruits is wonderful. Use any fresh berries of the season to toss into this, such as blackberries! Serve with hot cooked rice, or cooked lentils, pasta, etc. 1 pound beef steak, such as top round, top sirloin, or flank steak Slice the meat, cutting on the diagonal, into very thin strips, about 1/16-inch thick (freeze meat partially for ease in cutting thin slices). Marinate meat strips in mixture of soy sauce, garlic, ginger, and cornstarch for at least 1 hour. Sliver the vegetables evenly. When ready to cook, heat wok or stir-fry pan, adding the 2 tablespoons oil. When hot, add the marinated strips of beef and cook and stir 2-3 minutes, or until meat is done. Remove meat to platter. If necessary, add a little more oil to the wok and then add the vegetables, cooking and stirring for several minutes. In meantime, whisk together the broth, soy sauce, cornstarch, hot sauce, and pepper. Add to vegetables and cook and stir until sauce thickens slightly and takes on a clear sheen. Add the cooked meat, the berries, and the snipped cilantro. Serve! Recipe created 1995-01-01. © 1996-2013 Dorothy McNett. All Rights Reserved. |
