If you want this to be truly Jamaican hot, use habanero peppers. I prefer to use jalapeno or serrano peppers so that it is not so hot. 1 small onion, or 1/2 large one Chop up the vegetables very fine, adding seasonings to make a paste. Or, use the food processor with steel chopping blade. This makes about 1/2 cup, more than enough for rubbing onto a roast. It can be sored in a closed jar for a week or two.
