Jerk Rub from Jamaica

From Dorothy McNett's recipes at www.dorothymcnett.com. Make this and rub it into a beef or pork roast before roasting. If you want this to be truly Jamaican hot, use habanero peppers. I prefer to use jalapeno or serrano peppers so that it is not so hot.

1 small onion, or 1/2 large one
2 green onions
2-3 hot peppers, as desired for more or less heat
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
1 teaspoon dried thyme
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Chop up the vegetables very fine, adding seasonings to make a paste. Or, use the food processor with steel chopping blade. This makes about 1/2 cup, more than enough for rubbing onto a roast. It can be sored in a closed jar for a week or two.
