Buttermilk Biscuits

From Dorothy McNett's recipes at www.dorothymcnett.com. A delicious quick and easy biscuit to serve with soups, stews, salads, etc.

2 cups unbleached all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon semi-coarse sea salt
1 cup buttermilk, or sour cream

1-2 tablespoons flour for kneading
sprinkles of sea salt and paprika, as desired

Preheat oven to 425 degrees. Line baking sheet with silicone baking mat or parchment paper. In batter bowl, whisk together the flour, soda, baking powder and salt. With a spoon, blend in the buttermilk to make a soft dough. Turn out onto lightly floured surface and gently shape into a ball. Roll out to about 1/2 inch thick, sprinkling with more flour if needed. Cut into round biscuits, using a cutter or a knife. Place on baking sheet, sprinkle each with a few grains of semi-coarse sea salt and paprika. Bake 13-15 minutes, or until nicely browned. Serve piping hot!
