Grasshopper Pie

From Dorothy McNett's recipes at This is one version of many recipes from the past. It is very sweet, very rich, and was very popular! I have left out the green food coloring.

1 pkg. (8 oz.) Newman-O's Creme Filled Cookies
2 tablespoons unsalted butter, softened

1/2 cup milk
3 cups mini marshmallows
1/2 cup creme de menthe
1 1/2 cups whipping cream

shaved dark chocolate for garnish

Totally crumble the cookies, adding the soft butter to make a workable crumb mixture to pat into a 9 or 10 inch pie plate, or a cheesecake pan. (Using the food processor with the steel chopping blade in place makes it really easy to crumble the cookies and then add the soft butter to process into a nice crumb mixture.) Press the crumbs into the pan and up the sides. Refrigerate.
In a small heavy bottomed saucepan, heat the milk but do not let it boil. Add the marshmallows, stirring constantly. Take off the heat and stir until the marshmallows are totally melted and you have a smooth mixture. Pour into a batter bowl and allow to cool several minutes. Whisk in the creme de menthe. Set aside to cool. When it is cool, whip the cream to soft peaks. Gently stir the whipped cream into the marshmallow mixture, blending thoroughly. Gently spread the mixture into the cold crumb crust. Refrigerate several hours or overnight. Garnish with the shaved dark chocolate, slice and serve.
