From Dorothy McNett's recipes at www.dorothymcnett.com. Serve these fresh and uncooked, or heat them gently in the microwave. Either way, these popular tastes are great served with roasts, fish, cheese dishes and more.
1-2 firm ripe medium sized tomatoes (Early Girl, Romas, etc)
Cut each tomato in half. Arrange in a circle on a flat glass or ceramic plate. Mix together the cheese, garlic, crumbs and basil. Sprinkle evenly over the tomato halves. Serve as is, or place the plate in the microwave and cook 1 minute if using only 1 tomato, 2 minutes if using 2 tomatoes.
