Mango and Herbed Mascarpone Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Use mango, melons, berries...whatever is in season! This is a great companion to a salmon or other fish dinner.

2-3 cloves garlic, minced
1/3 cup mascarpone cheese
zest of the lime and lemon
2 tablespoons lime juice
2 tablespoons lemon juice
1/4 teaspoon sea salt
a few grindings of pepper, as desired
2 tablespoons milk or half and half
fresh herbs, such as parsley, basil, rosemary, mint, oregano (about 2-3 tablespoons minced)
1/2 cup extra virgin olive oil

1-2 fresh mangos, cut into chunks
other fruits, as desired, such as berries, pineapple, kiwi, apples, etc
fresh greens, as desired (baby spinach, crispy lettuce, romaine, etc.)

First make the dressing, using a food processor or a bowl with a whisk. I favor the processor as it whirls it into a smoother consistency, but both methods are equally tasty! If using the processor, put the steel chopping blade in place. With motor running, drop in the garlics to mince them, then add the cheese, zest, juices, salt and pepper, milk, and the herbs. Pulse to make a creamy mixture, and with the motor running, slowly drizzle in the olive oil. In a beautiful salad bowl, combine the fruits and the greens. Add the dressing, toss and serve.
