Pumpernickel Party Nests

From Dorothy McNett's recipes at www.dorothymcnett.com. A very pretty appetizer. Makes about 10.

1/4 cup unsalted butter, softened
1 teaspoon horseradish mustard
pinch of sea salt
about 1/2 - 1 cup alfalfa sprouts
10 slices pumpernickel rye bread
1/2 cup chopped walnuts or almonds, etc.
chopped pimiento or small tomato for garnish

Allow the butter to stand at room temperature to soften, or place in glass measuring cup and soften for 30 seconds on half power in the microwave. Stir together the soft butter, mustard, and salt. If desired, using a round cookie cutter cut each slice of bread into a circle. Spread the butter evenly over each slice. Sprinkle the sprouts evenly around the edges. Sprinkle the walnuts into the center. Garnish with chopped pimiento, or fresh tomato, or parsley...
