Herb Boursin Cream on Zucchini

From Dorothy McNett's recipes at www.dorothymcnett.com. If you want to use it as a dip instead of a spread simply thin it down with milk or even olive oil to get the desired dipping consistency. But, spread on zucchini slices it makes a fabulous appetizer that is easy to eat!

8 oz. cream cheese
1 cup plain yogurt
1-2 tablespoons fresh basil leaves, minced
1-2 tablespoons fresh chives, minced
1 tablespoon fresh rosemary, minced
1-2 tablespoons fresh parsley, minced
4-5 cloves garlic, minced

1-2 zucchini, thinly sliced
semi-coarse sea salt, as desired
snipped herbs for garnish

Soften the cream cheese at room temperature, or place in a bowl and soften on half power in the microwave for about 1 minute. Blend in yogurt, herbs, and garlic. Wash but do not peel the zucchini. Slice thinly and spread with the boursin cream. Sprinkle with a few grains of the salt, and garnish with herbs. Serve!
