Cinco de Mayo Pico de Gallo

From Dorothy McNett's recipes at www.dorothymcnett.com. A delicious and easy tomato salsa to serve with everything! Add some avocado if desired.

3 red ripe tomatoes
1 onion
2-4 serrano chilie
1/2 cup chopped fresh cilantro
1/2 teaspoon sea salt
zest and juice of 1 lime
2-3 tablespoons extra virgin olive oil
1 diced avocado

vegetable slices
cheese slices
tortilla chips, bread slices, etc.

Chop the tomatoes, onion, and peppers. Place in a bowl and add remaining ingredients. The flavors develop when allow to stand about 1 hour before serving, but is delicious right now! Serve with cooked meats, etc. and also use as an appetizer with veggies and chips and cheeses, etc.
