Lemon Butter Chicken Breasts

From Dorothy McNett's recipes at www.dorothymcnett.com It's the lemon that gives the chicken the special taste but the one clove of garlic adds to it as well! Use more garlic if you wish, but just 1 clove sometimes adds just the right blending of flavors.

4 half chicken breasts
paprika and pepper
1 lemon
2 tablespoons unsalted butter or olive oil
1 clove garlic, minced or pressed
2 tablespoons chopped parsley

Remove skin from chicken pieces; bone, if desired. Sprinkle chicken with paprika and pepper. Place chicken in shallow glass or ceramic baking dish, arranging meatier portions to outside edges of dish and placing pieces about 1 inch apart. Cut lemon in half and squeeze juice over chicken breasts. Cook in microwave, uncovered, 4-5 minutes. Turn chicken breasts over and for an additional 3-5 minutes, until chicken tests done. Set aside.
Meanwhile, place butter, garlic and parsley in glass measuring cup. Heat in microwave 1-2 minutes, until butter melts and garlic is soft. Pour butter sauce over chicken and serve.
