Blanc Mange with Fresh Strawberries
From Dorothy McNett's recipes at www.dorothymcnett.com. I use raw sugar which is brown in color so it is not exactly blanc.
1/2 cup raw sugar
In small heavy bottomed sauce pan, combine the sugar, cornstarch, salt and milk. Blend well. Bring to a boil, stirring constantly. Reduce to medium high and cook about 1 minute, perhaps a bit more, until it is smooth and thickened. Remove from heat, stir in the vanilla. Allow to cool. In meantime, slice the berries and stir in the sugar or honey and allow to stand so that they get a little juicy. Serve the pudding in individual glasses or bowls, topped with the sliced strawberries.
