Avocado and Spinach Delight

From Dorothy McNett's recipes at www.dorothymcnett.com. An appetizer or a side dish, this features the best of local avocados, fresh local spinach leaves, and has a Japanese touch with a sushi style.

1-2 avocados
medium to small fresh spinach leaves
thin slices albacore tuna (Wild Planet is great)
slivers of pickled sushi ginger
sprinkles of toasted sesame seeds
pinch of coral sea salt

Cut the avocado into small sections and place one on spinach leaf. Arrange a small piece of tuna on top, and then a small sliver of ginger. Sprinkle with sesame seeds and a pinch of salt. Serve as an appetizer or as a great side dish, or as a very special lunch!
