Avocado and Spinach Delight
From Dorothy McNett's recipes at www.dorothymcnett.com. An appetizer or a side dish, this features the best of local avocados, fresh local spinach leaves, and has a Japanese touch with a sushi style.
Cut the avocado into small sections and place one on spinach leaf. Arrange a small piece of tuna on top, and then a small sliver of ginger. Sprinkle with sesame seeds and a pinch of salt. Serve as an appetizer or as a great side dish, or as a very special lunch!
