Use any fresh berries of the season as long as they are local and fresh and ripe! It's a perfect blending of flavors, colors, textures for a great summer dessert. The hemp seeds add so much protein as well as texture. 3/4 cup unsalted butter, or coconut oil Preheat oven to 350 degrees. In glass or ceramic batter bowl, soften the butter or coconut oil 30 seconds in microwave. Whisk in the sugar to make a creamy mixture, adding the vanilla and milk or juice. Blend well. Switch to a silicone spatula and add the salt, hemp seeds, cereal, chocolate chips and blend well. Add the flour and carefully blend to get all of the flour mixed in. Dump onto a silicone lined baking sheet and with your hands and a spatula, pat it out into a circle about 1/2 inch thick. (Like making Scottish shortbread) If is seems a little soft, sprinkle the top with a bit more almond flour to help it keep its shape while baking. Cut into 12-16 wedges. Bake 20-25 minutes, or until nicely browned. Remove pan to a rack to cool. When totally cool, carefully remove the bars, and place on serving plate or plates. Spread or dollop each bar with softened mascarpone (room temperature) or cream cheese. Arrange the sliced berries over the cheese. Sprinkle with a few grains of salt. Serve!
