Okra Vegetable Roast with Peanuts

From Dorothy McNett's recipes at www.dorothymcnett.com. Okra probably originated in Africa. Use this method to cook it so that it is naturally flavorful.

12 - 18 okra pods
1 - 2 teaspoons extra virgin olive oil
sprinkles of sea salt (not necessary if using salted peanuts)
freshly ground pepper
2-3 tablespoons chopped peanuts, if desired

Preheat oven to 425 degrees. Line a baking sheet with silicone baking mat. Cut the okra pods into slices about 1/2 inch thick. Place with a cut side down on the baking sheet. Drizzle with oil, sprinkle with salt and pepper. Roast about 15 - 20 minutes. Allow to cool a bit, remove to serving plate and sprinkle with the peanuts, if using.
