American Bison Burgers

From Dorothy McNett's recipes at www.dorothymcnett.com. Make great big burgers to serve as a main dish on a large bun, or make smaller ones to serve as slidders on small sandwich buns.

1 - 1 1/2 pounds ground bison
2-3 cloves garlic, minced
2 teaspoons prepared mustard
1 egg
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
2-3 teaspoons grapeseed oil

buns or bread, as desired
catsup, mustard, mayo, lettuce as desired

In a large bowl, combine meat, garlic, mustard, egg, salt and pepper. Shape into desired sized patties. Heat a grill pan or a large heavy bottomed frypan, adding just enough oil to nicely coat the bottom of the pan. When it is sizzling hot, add patties so as not to crowd the pan. Cook 2-3 minutes, turn, and cook another 1-2 minutes or until done to your liking. Repeat with remaining patties, as necessary. Serve with buns or bread, garnished as desired with catsup, mustard, mayo, lettuce...
