Watermelon Salad

From Dorothy McNett's recipes at www.dorothymcnett.com.

1 small watermelon
1/2 cup diced or crumbled feta cheese
1/4 cup extra virgin olive oil
1 tablespoon vinegar (balsamic or white wine vinegar)
1/4 teaspoon sea salt
1-2 fresh mint leaves, snipped
crispy lettuce,or baby greens (or both!)

Wash the whole melon and dry with a towel before slicing. Slice watermelon into sections, removing peel. Cut into serving size cubes, about 3/4 inch or so. Place in a large bowl and stir in the feta. In glass measuring cup, whisk the oil, vinegar and salt. Pour over the melon, toss and allow to stand a few minutes. Arrange some greens over serving plates and carefully pile on the melon mixture. Garnish with snipped fresh mint leaves.
