Roasted Flavorful Potato Fries

From Dorothy McNett's recipes at Use any vegetables as desired, but this is especially delicious with baking potatoes and/or sweet potatoes.

2-3 large baking potatoes, or sweet potatoes
2-3 tablespoons good quality prepared mustard
2-3 tablespoons maple syrup
2-3 tablespoons extra virgin olive oil
1/2 teaspoon semi-coarse sea salt
freshly ground pepper

Preheat oven to 425 degrees. Line a baking sheet with sides with a silicone baking mat. Wash and peel (if desired) the potatoes. Cut into strips like French Fries, about 1/2 inch thick. In large mixing bowl, whisk together the mustard, syrup, oil, salt and pepper. Dump in the cut up potatoes and stir to coat all of the pieces. Place on the baking sheet in a single layer. Roast 20-25 minutes, or until nicely browned and tender.
