Kidney Beans with Cumin

From Dorothy McNett's recipes at www.dorothymcnett.com. This recipe uses a can of good quality kidney beans, but of course you can cook any beans you wish from scratch instead of using canned ones. This is a great side dish to serve with meat loaf, etc. It is the cumin that gives it a special flavor!

2 tablespoons extra virgin olive oil
1 red bell pepper, diced
3-4 cloves garlic, diced
2 teaspoons ground cumin
1 teaspoon dried oregano
1 can good quality kidney beans, or other beans as desired
3-4 green onions, sliced
1 teaspoon sea salt
1/4 - 1/2 teaspoon freshly ground pepper

In heavy bottomed saute pan or saucepan, heat the oil. Stir in the diced pepper, garlic, cumin, and oregano. Cook and stir about 3-4 minutes. Add the kidney beans along with any liquid. Cook gently to warm thoroughly, adding the sliced green onions, salt and pepper.
