Gingered Chicken Wings Dim Sum

From Dorothy McNett's recipes at www.dorothymcnett.com. Cook these ahead and refrigerate. When ready to serve, place on grill pan or under the broiler to heat and brown up a bit. I love the translation of dim sum, it means "touch the heart".

1 1/2 - 2 pounds chicken wings
2 inch piece of ginger root, cut into chunks
3/4 - 1 cup soy sauce
4-5 cloves garlic, minced
1/3 - 1/2 cup honey
3-4 tablespoons pale dry sherry

Separate the chicken wings at the joint. In large heavy bottomed saute pan or saucepan, combine all ingredients. Bring to a boil, stirring to blend. Reduce to simmer and cook about 15 minutes. Remove from heat and allow to cool. Refrigerate in the marinade until ready to serve. To heat for an appetizer (dim sum) remove the wings from the marinade and place on a griddle or grill pan and heat, browning slightly. Serve. Or, simply heat and serve as it is along with some rice, etc. as a main dish.
