Almond Cream Dessert

From Dorothy McNett's recipes at Instead of the half and half and the almond extract, substitute almond milk for a dairy-free delight!

1 envelope unflavored gelatin
1 cup water
1/4 cup raw sugar
2 cups half and half
2 teaspoons almond extract

canned lychees, or mandarin oranges (or fresh if available)

In glass or ceramic batter bowl, combine gelatin, water and sugar. Heat in microwave 2 minutes. Stir and allow to stand, stirring several times, to dissolve the gelatin and the sugar. Blend in the milk and almond extract. Pour into a shallow mold, or into serving dishes. Refrigerate several hours. Serve with fresh or canned lychees, mandarins, etc.
