Peach or Nectarine Salad

From Dorothy McNett's recipes at

1/2 cup white vinegar, or any "fruity" vinegar
1/4 cup water or apple juice
1/4 cup honey
1/2 teaspoon sea salt
2-3 tablespoons finely chopped fresh mint
1-2 tablespoons chopped candied ginger
3-4 fresh ripe peaches, or nectarines, or both
1 small cucumber (about 1 cup thinly sliced)
1 cup or more cherry tomatoes, etc.
3-4 green onions, thinly sliced, including the green stems
2-3 cups lettuce leaves of choice

In glass measuring cup, whisk together the vinegar, water or juice, honey, and salt. Add the chopped mint and candied ginger. Allow to stand about 5-10 minutes to blend flavors a bit. In meantime, cut up the fresh peaches or nectarines. Place in a beautiful salad bowl, adding the sliced cucumbers. If necessary, cut the cherry tomatoes in half. If they are tiny enough, leave them whole. Add the green onions. Toss in the dressing to coat evenly. Arrange on lettuce leaves, or tear the leaves and add them to the salad.
