Patatas Allioli (Potatoes with Garlic Sauce)

2-3 russet or other baking potatoes
2-3 tablespoons olive oil
sprinkles of sea salt

2-4 cloves garlic, finely minced
1 egg yolk
2 tablespoons lemon juice
1/2 cup Spanish extra virgin olive oil

Preheat oven to 400 degrees. Cut the potatoes into cubes about 1 1/2 inch square. Toss the potato cubes with 2-3 tablespoons olive oil and spread evenly onto a baking sheet with sides. Bake about 35-40 minutes, or until tender and golden brown, using a spatula to toss them around 2-3 times so that they brown evenly. Sprinkle with just a little sea salt and arrange on attractive serving plates. Put the finely minced garlic in a 2 cup glass measuring cup or similar bowl. Add the egg yolk, and whisk to break up the egg yolk, adding the lemon juice and whisking. Slowly add the olive oil in small amounts, whisking well after each addition. Drizzle over the potato cubes and serve.
