assorted Spanish olives (green, black, stuffed...)
small slices or wedges of Spanish cheeses (Manchego, Campo de Montalban, Murcia Curado (naked goat), Cordobes, Mitica, Petit Basque...)
Spanish ham (Jamon)
thin slices of bread, crostini, etc.
Quince paste
fresh tomato slices and extra virgin olive oil

Arrange, arrange, arrange...and dollop a bit of quince paste on top of slices of Manchego. Toast some bread slices, rub with a cut garlic clove. Arrange slices of tomato on top and drizzle with a bit of olive oil.
