Beer Bread Loaf or Muffins

From Dorothy McNett's recipes at Traditionally baked in a 9 by 5 inch loaf pan, but this simple recipe also works great baked as individual servings in a muffin pan.

3 cups unbleached all purpose flour
1/2 cup raw sugar
1 tablespoon extra virgin olive oil
1 (12 oz.) bottle of beer
1 cup grated cheddar cheese

Preheat oven to 350 degrees. In batter bowl combine flour and sugar. Add the oil and beer and blend well. Stir in the grated cheese. Lightly brush a 9 by 5 inch loaf pan with oil (or muffin pan). Place dough in the loaf pan, or using a spoon to fill muffin pans about 3/4 full. For the loaf pan, bake about 50-60 minutes, and for the muffins about 40-45 minutes or until nicely browned. Allow to cool, slice and serve.
