Salad Yam Krachup

From Dorothy McNett's recipes at From Thailand, this translates as a tofu salad of sorts.

1/2 - 1 cup medium tofu, cut into cubes
2 tablespoons soy sauce
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons fish sauce
2 tablespoons lemon juice plus the zest
1 tablespoon raw sugar
1 tablespoon finely minced fresh basil
1 can water chestnuts, sliced
3/4 to 1 cup finely diced cooked pork or ham (optional)
fresh green lettuce
chopped fresh coriander leaves
fresh red chilies, seeded and chopped, or dry red pepper for garnish

Cut tofu into cubes and marinate in soy sauce at least 30 minutes. Combine onion and garlic in batter bowl and heat in microwave 2 minutes. Blend in fish sauce, lemon juice and zest, sugar, and basil and put in salad bowl along with the sliced water chestnuts and diced pork. Serve with delicate lettuce leaves, garnished with coriander and chilies.
