Salad Yam Krachup

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. From Thailand, this translates as a tofu salad of sorts.

medium tofu, cut into cubes
2 tablespoons best quality soy sauce
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons fish sauce
2 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon finely minced fresh basil
1 can water chestnuts, sliced
3/4 to 1 cup finely diced cooked pork

chopped fresh coriander leaves
fresh red chilies, seeded and chopped, or dry red pepper for garnish

Cut tofu into cubes and marinate in soy sauce at least 30 minutes. Combine onion and garlic in batter bowl and microwave on High 2 minutes. Combine fish sauce, lemon juice, sugar, and basil. Blend all ingredients and serve with delicate lettuce leaves, garnished with coriander and chilies.
