Salad Yam Krachup
From Dorothy McNett's recipes at www.dorothymcnett.com. From Thailand, this translates as a tofu salad of sorts.
1/2 - 1 cup medium tofu, cut into cubes
Cut tofu into cubes and marinate in soy sauce at least 30 minutes. Combine onion and garlic in batter bowl and heat in microwave 2 minutes. Blend in fish sauce, lemon juice and zest, sugar, and basil and put in salad bowl along with the sliced water chestnuts and diced pork. Serve with delicate lettuce leaves, garnished with coriander and chilies.
