Toasted Sesame Seed Salad

1/4 cup sesame seeds
1 teaspoon butter

1 tablespoon diced onion or leek
2 cloves garlic
1- 2 teaspoons crystalline candied ginger
2 tablespoons lemon juice
2 tablespoon rice wine vinegar
1/4 cup honey
1/4 teaspoon sea salt
1/2 cup peanut or olive oil

fresh green lettuce
spinach and other baby greens, as desired

First toast the sesame seeds by heating a small skillet, melting the butter. Add the sesame seeds and cook and stir 1-2 minutes over medium high heat to brown the seeds. Set aside. In food processor with steel chopping blade in place, whirl the onion, garlic and ginger to chop finely. Add the lemon juice, vinegar, honey and salt and blend well. With motor running, gradually drizzle in the oil. Blend in the cooled sesame seeds. Serve with lots of fresh lettuce and other greens as desired.
