Olive and Elderberry Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. A delicious salad dressing made from extra virgin olive oil and natural elderberry concentrate to drizzle over any combination of fresh local greens, vegetables, nuts and herbs as desired! Roast some peppers ahead of time with drizzles of olive oil if time permits, or use fresh ones.

1 cup olives, pitted and sliced (any variety and combo)
1 red or green bell pepper, sliced or diced
1 cup raw walnuts or cashews, chopped
3-4 cups or more of fresh greens, as desired
1/2 cup fresh parsley, coarsely chopped
1/4 cup extra virgin olive oil
2-3 tablespoons elderberry concentrate (undiluted)
2-3 cloves garlic, finely minced
1/4 - 1/2 teaspoon semi-coarse sea salt
freshly ground pepper

In a beautiful salad bowl combine the olives, sliced peppers, walnuts, greens and parsley. In a glass measuring cup, whisk together the oil, elderberry concentrate, garlic, salt and pepper. Drizzle over the salad, toss gently, and serve!
